Share the love...Share the Chocolate! There may be no finer way to say "I Love You" than with our decadent Chocolate Silk Pecan Pie.  The pecans make it southern, and the chocolate makes it fabulous.  Happy Valentine's Day, Y'all!

1 refrigerated pie crust

2 eggs

1/3 cup sugar

1/2 cup dark corn syrup

3 T butter, melted

1/2 cup pecans, chopped

1 cup hot milk

1/2 t. vanilla extract

1 (12 oz.) pkg. semi-sweet chocolate morsels

Whipped Topping:

1 cup whipping cream

3 T. sugar

1/4 t. vanilla exgract

chocolate curls, if desired

Heat oven to 350 degrees.  Place pie crust in a 9" pie plate.  In a mixing bowl, beat the eggs with an electric mixer until blended.  Add the sugar, corn syrup and butter and mix well.  Stir in the pecans.  Pour mixture into the pie crust.  Bake 45-50 minutes, until the center of the pie is puffed and golden brown.  (If needed, cover the edges of the pie with aluminum foil during part of the baking time to prevent excessive browning.)  Cool 1 hour.

While pie is baking:  In a blender or food processor, blend the hot milk, vanilla and chocolate morsels until combined, about 1 minute.  Refrigerate until thickened, about 1 1/2 hours.  Spread over the cooled pecan pie.  Refrigerate 1 hour, until set.

Prior to serving, beat the whipping cream, sugar and vanilla until slightly stiff.  Place a dollop on each pie slice and garnish with chocolate curls.
