• Fully Loaded Pimento Cheese

Little else satisfies the southern soul the way pimento cheese does.  It is the guest of honor at any social gathering, regardless of how casual or upscale the occasion may be.   This is the only pimento cheese recipe you will ever need.  Look no further.  Our "fully loaded" version tantalizes the taste buds with the addition of chopped jalapenos and roasted pecans.  If you are a pimento cheese purist, simply omit these items.  Want to turn it up a bit more?  Mix in some crumbled bacon.  Are you smiling now?  We bet you are.

1 (8 oz.) pkg. cream cheese, softened

4 cups sharp cheddar cheese, shredded

1/3 cup mayonnaise

1 tsp. garlic powder

1 (4 oz.) jar diced pimentos, drained

4 Tbsp. pickled jalapenos, diced

1/2 medium onion, finely chopped

1/2 cup pecans, chopped

2-3 dashes hot sauce

Preheat oven to 375 degrees.  Place the pecans in a single layer on a baking sheet and roast for 8-10 minutes until golden brown.  Cool for 10 minutes.

In a large mixing bowl, combine the cream cheese and cheddar cheese.  Add all remaining ingredients and combine thoroughly.  Cover and chill at least 1 hour.

Makes 4 cups
