• Gooey Chocolate Fudge Cake

My mother was given this recipe by the mother of a girl in my 5th grade class.  She brought a piece to school in her lunch box one day and I begged her relentlessly until she gave me a bite. We've been making it in my family for more than 40 years.

2 cups sugar

2 cups flour

1 stick butter

3 1/2 T. cocoa

1 cup water

1/2 cup oil

2 eggs

1/2 cup buttermilk

1 t. baking soda

1 t. pure vanilla extract

Preheat oven to 325 degrees.  In a large mixing bowl, combine the sugar and flour.  In a medium saucepan, heat the butter, cocoa, water and oil until butter is melted.  Pour over the flour mixture and combine.  Add the eggs, buttermilk, baking soda, and vanilla.  Mix well.  Pour the batter into an ungreased 9x13-in baking pan.  Bake 35-40 minutes or until a toothpick inserted in the center comes out clean.  

Poured Icing

1 stick butter

1/3 cup milk

3 1/2 T. cocoa

1 box confectioner's sugar

In a medium saucepan, heat butter, milk, and cocoa over medium heat until butter is melted.  Gradually add the confectioner's sugar and stir continuously until icing is smooth.  Pour immediately over hot cake.

Makes 12-16 servings
