What do southerners do when the mercury rises and balmy weather causes us ladies to "glisten?"  Why, eat some watermelon, of course.  This frosty, sweet, fruity granita is everything a summer treat should be!

8 cups fresh, seedless watermelon, cut into chunks

Juice of 2 limes

¼ cup sugar

Place 4 cups watermelon chunks, juice of one lime and half the sugar in a blender and process until smooth.  Pour the mixture into a 9 x 13 baking pan.  Repeat with the remaining watermelon, lime juice and sugar and add to the baking dish.  Place in the freezer for 2-3 hours then remove and scrape the top, frozen layer to loosen it.  Return to the freezer and repeat the process every two hours until the entire pan has been shaved.  Cover and store in the freezer until ready to serve.  Serve in pretty glasses with a wedge of fresh watermelon.
