If you love football food as much as we do, you'l be all over this scrumptious menu we put together for our Super Bowl LI viewing party.   Diets begone...this menu is so worth splurging on!  We've made no secret that we're rootin' for our southern boys, the Atlanta Falcons.  So in honor of our beloved dirty birds, we're serving up buffalo sliders as part of a menu that will keep us full and satisfied as we cheer our team to victory!

Dirty Bird Buffalo Sliders          

4 cups shredded Rotisserie chicken

3/4 cup hot sauce

2 T. butter, melted

2 T. lemon juice

1 T. brown sugar

2 cups shredded cole slaw mix

1/3 cup ranch dressing

3/4 cup blue cheese crumbles

1 dozen dinner rolls

Preheat oven to 350 degrees.  In a baking dish, combine the chicken, hot sauce, butter, lemon juice and brown sugar.  Cover with foil and bake 20 minutes or until heated through.

In a small bowl, combine the cole slaw, ranch dressing and blue cheese crumbles.

Slice the dinner rolls in half horizontally.  Spread the chicken mixture over the bottom halves then top with with the cole slaw.  Replace the tops and serve.

   Winter Fruit Sangria

1 cup brandy

1/2 cup sugar

1 sliced orange

1 sliced apple

2 bottles Rose wine, chilled

1 cup lemon-lime soda

3/4 cup orange juice

In a large pitcher, combine the brandy, sugar, and orange and apple slices.  Let stand for 20 minutes.  Add the wine, soda and orange juice.  Serve in glasses over ice.

Skillet Cheese Fries

1 lb. frozen french fries

1 cup shredded cheddar cheese

1 cup shredded Monterrey jack cheese

12 slices bacon, cooked crisp

1/4 cup sliced green onions

1/4 cup pickled jalepenos

Bake the french fries according to the package directions until crispy.  

Preheat oven to 350 degrees.  In a cast iron skillet, layer half the fries then top with half the cheeses, bacon, onions and jalepenos.  Repeat with the remaining fries and toppings.  Bake until the cheese is melted, about 10 minutes Serve immediately.

Fruit Skewers with Vanilla Honey Yogurt Dip

10 wooden skewers, cut in half

Assorted Fruit  (we love strawberries, oranges, kiwi, blueberries)

2 cups vanilla yogurt

1/4 cup honey

1/2 t. ground cinnamon    

In a medium bowl, whisk together the yogurt, honey and cinnamon.  Spear the fruit onto the skewers and serve with the dip.  Healthy and delicious!



Snickers Ceam Cheese Ball

12 oz. cream cheese, softened

3/4 cup confectioners sugar

1 t. vanilla extract

1 cup caramel sauce

1/3 cup chocolate sauce

1/2 cup roasted peanuts, chopped    

4 Snickers bars, chopped into small pieces

graham crackers for serving

In a bowl, beat the cream cheese, sugar, vanilla, caramel sauce and chocolate sauce until light and fluffy.  Fold in the peanuts.  Wrap the mixture in plastic wrap and shape into a ball.  Refrigerate about 1 hour, until slightly firm.  Unwrap the ball and place on a serving plate.  Press the chopped Snickers bars all over the ball.  Allow to soften about 20 minutes before serving.  Serve with graham crackers.
