Another twist on Thanksgiving leftovers (or for year-round turkey lovers like myself!) This is so easy, you won't have a problem whipping it together in your post-Black Friday shopping haze. 


1 unbaked 9" pie crust
1/2 cup milk or half-n-half
1 cup grated Gruyere cheese
1 cup grated cheddar cheese
2 eggs
1/2 cup mayonnaise
1 T. cornstarch
2 t. salt
1 1/2 cups chopped roast turkey
1/3 cup sliced green onion


Whisk together milk, eggs, mayonnaise, cornstarch and salt until smooth. Stir in remaining ingredients and combine. Pour into prepared pie crust. Bake 45 minutes at 350 degrees or until set. 

Serve with a heap of cranberry sauce and enjoy!
